Without doubt one of the most popular and sought-after common mushrooms when the season is in full swing. Fresh, it will be the queen of your omelettes, along with Cèpe.

• Death's trumpet

Very aromatic when dried, it's perfect for pâtés and even foie gras.

• Amanite des Césars or Oronge car orange, raw in carpaccio or cooked, you'll be in ecstasy!
