Since 2020, in Sainte-Rose on the slopes of the volcano, Quentin Donnay has been growing 1 hectare of vanilla and lontan fruit in a 5-hectare agroforestry system that combines innovation and respect for the forest, based on practices adapted to local climatic challenges.
"Most of our vanilla is grown on red palmetto, because it's an indigenous species that's resistant to cyclones. It's really part of our approach to resilience and adaptation to climatic phenomena. During the Belal cyclone, these stakes stood up to the shock, unlike other exotic supports"
Growing vanilla requires precision work and a great deal of patience. Quentin has mastered specific technical gestures such as looping, which consists of lowering the vines to maintain them and prepare them for the next flowering season.
"Vanilla harvesting takes place from June to September. It's a long-term technical itinerary, and one that requires patience. You have to wait 3 years for the first flowers, then 9 months for the pods. Everything is done by hand, from fertilization to harvesting
In his workshop, Quentin pampers his pods so that they reach the level of quality sought after by the most demanding chefs.
"In agroforestry, we can't compete on quantity. So we focus on quality. Our aim is to obtain frosted pods, a symbol of quality that reflects our know-how, from field to processing."
